Matcha Sable Crumbs

Yield: 3 cups of crumbs

3 1/2 ounces cold butter

3 1/2 ounces sugar

3 1/2 ounces almond flour

3 1/2 ounces all-purpose flour

1/4 teaspoon salt

1 1/2 teaspoons Matcha Powder

Preheat oven to 325 F.  Combine the dry ingredients in a mixer with the paddle attachment until completely incorporated.  Cut butter into tablespoons and add to the mixer.  Mix until crumbly.  Spread out on a sheet pan and bake until crumbs just begin to brown.  Let cool and crumble further if the crumbs clump together.  Store well covered.

Consider using these crumbs layered with ice cream or custards.
